Easy Vegan Butter (Not) Chicken

This 5 ingredient recipe is a regular in our family. So easy, quick and yum:

Ingredients:

🌱2 packets Asian Home Gourmet butter chicken spice paste (or a similar brand of paste – check the label for added dairy)
🌱1 onion
🌱1 can coconut cream
🌱1 can chopped or puréed tomatoes
🌱1 packet Sunfed Meats chicken free chicken (or any other vegan chicken substitute, or 2 cans chickpeas)

➡️ Cook onions then add spice paste and cook another minute
➡️ Add tomatoes and coconut cream and simmer for 10 mins
➡️ Just before serving (very important or will go mushy), add in the Sunfed chick’n.
➡️ Serve with rice, coriander, naan or pita bread etc

If your Sunfed Chick’n is frozen you might want to pan fry it first till brown, then add to mixture. You can buy Sunfed at most NZ supermarkets, usually in deli/fridge area, plant based area, or in freezer. In Australia it is stocked at Coles 

Sunfed is made from pea protein and only contains: water, pea protein, rice bran oil, pea fibre, pumpkin, natural yeast extract and maize starch. If you wanted to stick to whole foods you could use chickpeas or tempeh instead.🌱
