Pad Thai Stir Fry🌈

Add the following to a large frying pan and stir fry for a few minutes:

  • Prepared rice noodles
  • red cabbage
  • tempeh
  • mung bean sprouts
  • grated carrot
  • spring onion
  • broccoli
  • fresh coriander
  • cashew nuts

Mix up the dressing below and pour over the vegetables, cook for another 5 mins. 🌈🌱👌

Yummy dressing:

  • 1/2c almond butter
  • 4Tbsp soy sauce
  • 2 limes, juiced
  • 2 cloves garlic
  • knob ginger
  • 2 Tbsp maple syrup
  • 4 Tbsp water
  • 1 Tbsp sesame oil

Total prep and cooking time = 15min 👍
