Vegan Banana Cake or Muffins

A friend asked today for a vegan banana cake recipe that they could use at their child’s birthday party which my son would be attending. It is so heart warming when people make the effort to provide vegan food for my kids and for that I am so grateful. While I’m more than happy to provide a cupcake or plate of food for my kids to take to parties so that they don’t miss out, I love it when all the kids get to indulge in vegan food and discover that, actually, it is just as tasty as ‘normal’ food . And also my child doesn’t feel left out at all as they get to share the same food, so it’s a win win..

Anyway, my advice for making a tasty vegan banana cake? Just use your usual go-to banana cake recipe! All you have to do is make a few easy substitutions and you have veganised your traditional banana cake recipe:

→ For Eggs – Use a ‘Flax Egg’. 1Tbsp ground flax seed soaked with 3-4Tbsp water. You can also use chia seeds in same way, or aquafaba (chickpea liquid from can), among other options.

→ For Cow’s Milk – Use plant milk. Soy, oat, rice, almond, coconut will all work just as well.

→ For Butter – Use coconut oil, olive oil or Nuttelex margerine (or similar)

→ For Honey – Use Maple Syrup or extra sugar

 

However, if you want a tried and tested vegan banana cake recipe, then this is my go-to. Enjoy!

 

Vegan Banana Cake or Muffins

Ingredients:

3 large ripe-to-over-ripe bananas

1 Flax Egg

1/3 cup coconut oil, warmed until liquified, or olive oil

1/3 cup sugar (brown, white, coconut)

1/4c maple syrup (or extra sugar)

1 tsp vanilla

1 tsp baking soda

1/4 tsp salt

1 tsp cinnamon

1/4 tsp nutmeg

Pinch cloves

1.5 cups white or wholemeal flour

1/4c coconut

Optional – 1/2c dairy free chocolate chips (Pams brand, sweet william brand, Trade aid brand among others)

 

Method:

Mash bananas, melt coconut oil, soak flaxseeds, then mix all wet ingredients together. Stir in dry ingredients. Add some extra water or plant milk if mixture feels too firm. Fold in chocolate chips if using. Bake in oven at 180c for 30mins or until cooked.

Ice with chocolate or lemon icing. Just use Icing sugar, a few Tbsp melted coconut oil and either Cocoa powder or lemon juice, mixed with water to right consistency.

 

You can also use this recipe to bake as muffins or a banana loaf instead 🙂
