
20 Jun Chickpea Choc Chip Cookies
So yum and so easy. .
2 cans chickpeas (skins off**)
1/2c peanut butter
2Tbsp maple syrup
1/4c rolled oats (exclude or replace for gf)
3tsp vanilla
1/2c vegan choc chips
➡ whizz all except choc chips in food processor till smooth
➡ fold choc chips in, then roll into balls and flatten on a lined tray
➡ bake at 2000c for 15min, leave to cool before eating
Protein packed and the texture is 👌. Now to be honest, my kids didn’t love them, but I did, and maybe yours will if they are not as fussy as mine. 😂
**To skin chickpeas, rinse in a big bowl of water and massage chickpeas, the skins will come off and you can tip the water out along with the skins. Refill water and repeat process a few times 🙂
