31 Jul ‘Not Chicken’ Vegan Nuggets
While it is great to see the huge range of plant based ‘meat’ products available these days, it is much cheaper and healthier to make your own. These homemade ‘not chicken’ vegan nuggets can be whipped up in under half an hour, and the kids love them (as well as their non-vegan friends). I like to make a double or triple batch and freeze them (before frying) for future meals.
- 1c cashews, soaked
- 1/2c oats, whizzed into flour
- 1/4c vital wheat gluten (or chickpea flour for wheat free)
- 1/2t garlic powder
- 1/2t onion powder
- 1/2t salt
- 2T oil
- 6T water
➡️ whizz till blended into a dough.
➡️ shape into nuggets, dip in soy milk, then breadcrumbs with turmeric, then fry 👌
The wheat gluten gives them a meaty texture, however you can make it with chickpea flour for a wheat free option, just doesn’t turn out as chewy. 🤷🏻♀️
