
25 Feb Mild Curried Vegan Mince
This is a versatile recipe that you can hide as many veggies in as you can get away with! Fussy kids approved 👍
Warning: it is VERY meaty tasting so your little hard core vegans may not like it. Perfect for families transitioning to vegan lifestyles though 🙂
Ingredients:
- 1 chopped onion
- 1 Cup sliced mushrooms
- 1 Cup frozen peas
- Lee Kum Kee’s Coconut Curry sauce (or any other mild sauce – check that it doesn’t have milk powder in it!)
- Funky Fields plant based mince – or any mince alternative would work
Fry the onions and mushrooms, add the mince and heat through. Even though the plant based mince looks EXACTLY like normal beef mice, it does not turn brown when cooked so don’t dry it out too much.
Add the frozen peas and the sauce and simmer for 5 mins until heated through.
Serve with your choice of wholegrains – rice, pasta, quinoa or even toast!
