
14 May Pad Thai Stir Fry🌈
Add the following to a large frying pan and stir fry for a few minutes:
- Prepared rice noodles
- red cabbage
- tempeh
- mung bean sprouts
- grated carrot
- spring onion
- broccoli
- fresh coriander
- cashew nuts
Mix up the dressing below and pour over the vegetables, cook for another 5 mins. 🌈🌱👌
Yummy dressing:
- 1/2c almond butter
- 4Tbsp soy sauce
- 2 limes, juiced
- 2 cloves garlic
- knob ginger
- 2 Tbsp maple syrup
- 4 Tbsp water
- 1 Tbsp sesame oil
Total prep and cooking time = 15min 👍
