
04 Dec Vegan Cheese Rolls aka ‘Southland Sushi’
A classic New Zealand snack, and especially a Southland staple, the cheese roll usually consists of white bread rolled up with a cheese spread inside, then toasted with butter.
I veganised an old recipe (that used reduced cream, cows cheese and onion soup) into this healthier, kinder and tastier version. Enjoy!
Ingredients:
- 1 cup cashews (soaked in boiling water minimum 10 mins)
- 1/2c water
- 250-400g grated cheese (I used a mix of Angel Food mozzarella and Zenzo Its All Good cheddar)
- 1tsp onion powder
- 1tsp garlic powder
- 1Tbsp Ceres Organics mayonnaise (optional)
- Salt and pepper to taste
- 12-15 slices white bread
- Nuttelex or vegan butter
- Optional extras: spring onion or red onion.
➡️ Blend the cashews to make a cashew cream then put into a saucepan with remaining ingredients.
➡️ Heat until Cheese is slightly melted
➡️ Spread 1Tbsp cheese mixture on a slice of bread then roll up. Should make 12-15 rolls
➡️ Butter top of roll then either toast in a toastie machine, fry in a frypan or bake in oven for 10 mins until toasted.
➡️ Enjoy!
These can also be frozen (pre toasted) and taken out to use when needed.
