
15 Oct Vegan Mac ‘ n ‘ Cheese Pasta
This cheesy pasta sauce is the ultimate comfort food for kids. Cheesy flavour, smooth texture and bonus of hidden veges!
Ingredients:
– 1 medium or 2 small potatoes, boiled
– 1 medium carrot, boiled
– 1/4c soy milk
– 1/4c oil
– 1tsp onion powder
– 1tsp garlic powder
– 1Tbsp nutritional yeast
– 1/2Tbsp tomato purée (optional, for colour – could also use 1/2tsp turmeric for a more yellow colour)
– 1.5tsp arrowroot/tapioca/corn starch (or any flour)
– 1/2 tsp salt
Directions
- Cook pasta according to packet directions (I like using organic quinoa fusilli)
- Boil potatoes and carrots, then drain
- Add all sauce ingredients together and blend in a high speed blender until a smooth consistency
- Pour over pasta and serve 🙂
