
20 May Vegan Roast Dinner
Being vegan does not mean you have to miss out on the classic family roast dinner!
By replacing the traditional meat roast with a healthy vege roast that is high in Protein with added Iron, B12 and Zinc, you are creating a cheaper, healthier and kinder family meal that everyone loves.
The main ‘meat’ roast I use is the Vegie Delights brand, however you can use any kind of vegan roast. This one is around $7-$8 and feeds 5 hungry girls with 2 x slices each. Double up if you have more people to feed. Use any veges you have available!
Ingredients:
1 x Vegie roast
Vegetables for roasting – potatoes, pumpkin, sweet potato, onion
Peas &/or corn
Your choice of Gravy (Gravox is Vegan)
Glaze –
2 tbsp cranberry sauce
1 tbsp maple syrup
1 tbsp apple cider vinegar
¼ cup macadamia or almonds crushed
1 tsp of dried thyme
Instructions:
Preheat oven to 180°C
Prepare vegetables and place in an oiled baking tray – add sprigs of rosemary
Combine glaze ingredients into small bowl until a paste is formed
Grease baking dish. Coat roast with glaze and turn to ensure even cover and leave to marinate.
Bake vegetables for approx. 20-25mins
Add roast to the partly baked vegetables and continue cooking for a further 25-30mins. Meanwhile cook the peas and corn.
Slice up the roast and serve with veges and your choice of gravy.
